Mediterranean Whipped Feta Dip

Mediterranean Whipped Feta Dip

Ingredients:

  • 6-8 oz or about 1 1/2 cups feta cheese

  • 1/2 cup plain greek yogurt

  • zest from 1 lemon

  • juice from 1/2 - 1 lemon (start with 1/2 and then add more after blending and tasting if needed)

  • 2/3 cup pomegranate seeds

  • 1/3 cup chopped roasted and salted pistachios

  • 2 tbsp fresh mint, finely chopped

  • 2 tbsp fresh parsley, finely chopped

  • pinch of black pepper

  • drizzle of olive oil

  • options: drizzle of honey or hot honey

Instructions:

  1. Add feta, Greek yogurt, lemon zest, and lemon juice to a mini food processor and blend until smooth. If you need to make it thicker, add a little more feta. If you need to make it thinner, add a little more greek yogurt. Add more lemon juice if desired.

  2. Spread the whipped feta on a large plate or serving dish. Top with pomegranate seeds, followed by pistachios, mint and feta. Top with cracked pepper and drizzle with olive oil and optional honey/hot honey.

  3. Pair with crackers, pita, or sliced bread for serving.
