Loaded Southwest Sweet Potato
Easy to make, full of flavor, and filling—the perfect healthy dinner meal you can be sitting down to eat in less than 10 minutes. This recipe is part of my “I Don’t Feel Like Cooking Series",” where I’m creating healthy yet quick meal ideas for those that are short on time or don’t feel confident in the kitchen.
This recipe has everything you need—fiber-rich carbs, protein, & healthy fats to keep you satisfied. Despite being incredibly easy to pull together, this dish is not lacking in flavor. Toppings like taco seasoning, lime, cilantro, salsa, and jalapeño sauce add the perfect spicy and fresh taste.
Loaded Southwest Sweet Potato
Serves 1
Ingredients:
1 medium sweet potato
1 cup canned black beans, drained and rinsed
1 tbsp taco seasoning
a few tbsp salsa or pico de gallo
a few tbsp shredded Mexican cheese mix
1/2 avocado, sliced
a few tbsp plain Greek yogurt
sprinkle of fresh cilantro, roughly chopped
juice of 1/4-1/2 lime
optional: drizzle of Siete Foods jalapeño sauce
*if you have more time you can add some cooked ground meat tossed in taco seasoning for extra protein.
Instructions:
Microwave the sweet potato until soft (a fork should insert easily), at least 5 minutes.
In a small bowl, combine the black beans and taco seasoning and toss until fully mixed.
Cut the sweet potato in half lengthwise.
Add toppings to sweet potato halves: black beans, salsa, cheese, avocado, Greek yogurt, cilantro, lime, jalapeño sauce.
