Healthy Burger Bowl
This burger bowl is one of those meals that perfectly captures what I mean when I say healthy eating should feel realistic, satisfying, and easy enough to make on a busy weeknight. You still get all the flavors of a classic burger and fries — crispy potatoes, savory burger-seasoned beef, crunchy pickles, creamy avocado, and special sauce — but in a more balanced, feel-good format. It’s high in protein, packed with fiber and volume from the veggies, and comes together with simple ingredients you can keep on hand. This is exactly the type of meal I encourage clients to build more often: quick, satisfying meals that make the healthy choice feel convenient instead of complicated.
Makes 1 bowl
Ingredients
Potatoes:
1 cup yellow baby potatoes, sliced
Spices: 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp paprika, pinch of salt + pepper
1/2 tbsp olive oil
Protein:
1 cup Abbott’s “Beef” (vegetarian option, or use a similar option from another brand) or lean ground beef
Spices: 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp paprika, pinch of salt + pepper
Drizzle of olive oil
Bowl:
2 cups romaine lettuce, chopped
1/2 cup cherry tomatoes, sliced
2 pickle spears
1/2 avocado
Pickled onions (about 1/4-1/3 cup)
Drizzle of Primal Kitchen Special Sauce
Instructions
Preheat oven to 450°F.
Toss the potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Place cut-side down on a parchment-lined baking sheet and bake for 30 minutes, flipping halfway through.
Cook the Abbott’s “Beef” or lean ground beef in a pan with olive oil and seasonings until browned and cooked through.
Assemble your bowl with romaine, tomatoes, pickles, pickled onions, avocado, crispy potatoes, and protein.
Drizzle with Primal Kitchen Special Sauce and enjoy
