Blended Banana Bread Baked Oats

These are well-balanced with carbs & fiber from the oats and banana and protein from the cottage cheese & egg (and milk if you choose one with protein). They’re also easy to make—simply blend all the ingredients together, pour into dishes, and bake.

Blended Banana Bread Baked Oats

Makes 2 servings


Ingredients:

  • 3/4 cup rolled oats

  • 1 very ripe/over-ripe banana

  • 1 egg

  • ½ cup milk of choice (use cow’s or soy milk for some extra protein)

  • 1/3 cup cottage cheese

  • 1 tbsp maple syrup or honey

  • ½ tsp vanilla extract

  • ½ tsp cinnamon

  • 1 tsp baking powder

  • Pinch of sea salt

  • Optional mix-ins: a couple tablespoons of chopped walnuts, pecans, or chocolate chips

  • Optional toppings: greek yogurt, nut butter

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease two 8 oz ramekins or similar sized oven-safe dishes.

  2. Blend oats, egg, banana, milk, cottage cheese, sweetener, vanilla, cinnamon, baking powder, and salt until smooth.

  3. Add in mix-ins if using and stir. Save a few for topping.

  4. Pour batter into the prepared dish.

  5. Bake for 25–30 minutes, until the top is golden and a toothpick comes out clean.

  6. Let cool slightly, then enjoy warm or cold. You can top with nut butter or yogurt for a little extra protein.
