10-Minute Greek Bowl
Makes 1 bowl
Ingredients:
1 cup frozen cooked brown rice
1-2 tsp chili crisp oil
1 cup cherry tomatoes, sliced
1 cup cucumber, diced
3-4 rozen falafel or 3+ oz rotisserie chicken
~ 1-2 tbsps hummus
1 large spoonful of tzatziki
1 large spoonful pickled red onions
~ a few tbsps feta, crumbled
lemon juice (from about 1/4-1/2 lemon)
optional: fresh dill, chopped, for topping
Instructions:
Microwave the brown rice according to package instructions and toss with chili crisp oil until the rice is evenly coated.
Spread an even layer of hummus on the bottom of a large shallow bowl.
Assemble: Add the brown rice, tomatoes, cucumbers, falafel or chicken, pickle red onions and tzatziki to the bowl.
Top with crumbled feta, lemon juice, and fresh dill.
