Peanut Butter Chocolate Dough Bites (No-Bake)

Sometimes you just need a bite of something sweet or a little midday chocolate treat. These No-Bake Peanut Butter Chocolate Dough Bites are the perfect solution. They’re everything you love about your favorite peanut butter & chocolate desserts, but with less sugar and more satiating nutrients like healthy fats and protein.

Made with just 6 ingredients, this recipe is also super easy to follow and quick (minus the freezing time). First, you make the dough by simply blending chickpeas, almond flour, peanut butter, maple syrup, and vanilla in a food processor (don’t worry, no chickpea flavor to be found). Next, the dough is rolled into balls and dipped in dark chocolate. Finally, the balls are placed in the freezer to set for a few hours, so no baking is required. Think of these bites as a frozen treat. Keep them in the freezer and grab one whenever you need a quick bite.

If you want to make this recipe a little more decadent, feel free to add more maple syrup (you may need to add a little more almond flour if the dough seems too thin). On the other hand, you can toss in some protein powder to boost the protein content if you’re looking for more of a filling snack. Check out the recipe below:

Makes 18-20 bites

Ingredients:

  • 1 15 oz can of chickpeas, drained and rinsed

  • 1 cup almond flour

  • 1/2 cup smooth peanut butter*

  • 1/3 cup maple syrup

  • 1 tsp vanilla

  • 1 cup dark chocolate chips *check ingredients to make sure they’re dairy-free if strictly vegan

    *add 1/4 tsp salt if using unsalted peanut butter

Instructions:

  1. Add chickpeas, almond flour, peanut butter, maple syrup, vanilla and salt (if using) to a food processor. Blend until smooth (the dough should be thick and sticky).

  2. Roll dough into 1.5 inch balls and place on parchment lined baking sheet. Place in freezer for at least 30 minutes.

  3. Add chocolate chips in a small microwave-safe bowl and heat in 30 second increments, stirring after each period until chocolate is completely melted.

  4. Remove dough bites from freezer. Dip bites into melted chocolate, using spoons or hands to cover each bite in a thin layer of chocolate. Place bites back onto parchment lined baking sheet.

  5. Freeze bites for at least 2-3 hours before serving. The longer they freeze, the better the texture (but if it’s too tempting…you can consume earlier, they will just be extra soft).

  6. Store extra bites in an airtight container in the freezer. Keep frozen until ready to consume.
