Pumpkin Chocolate Chip Cookie Dough Balls

Makes 16-18 balls

Ingredients:

  • 1.5 cups rolled oats

  • 1/2 cup raw walnuts

  • 1/3 cup pumpkin puree

  • 2 Tbsp ground flaxseed

  • 1 Tbsp hemp seed

  • 2 Tbsp peanut or almond butter

  • 3 Tbsp maple syrup

  • 1 tsp pumpkin pie spice

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt

  • 1/4 cup mini chocolate chips

Instructions:

  1. In a food processor, blend oats until a course flour forms. Then add walnuts and blend until walnuts are finally chopped (about 10 seconds).

  2. Add the remaining ingredients (except for the chocolate chips) to the food processor and blend until a sticky dough forms.

  3. Add chocolate chips and briefly blend until chocolate chips are mixed.

  4. Roll dough into 1 inch balls and place in the freezer for 5-10 minutes to set. Store in an airtight container in the freezer.
