Peach Crisp (Vegan + Gluten-free)
Fruit crisps are perfect when you want an easy, flexible, and relatively nutritious dessert that hits the spot. They are a great opportunity to sneak some more fruit into your diet and can be made with a variety of seasonal fruits. Peaches are one of my favorite choices, as they get extra juicy, soft, and sweet when baked. In order to make this crisp, all you have to do is mix together a few ingredients for the crumble, layer it on top of the peaches, and bake. So simple, yet so delicious.
Peach Crisp
Makes about 6 servings
Ingredients:
6-7 peaches, sliced
2 cups rolled oats*
1 cup almond flour
1/2 cup coconut sugar or brown sugar
1 tsp cinnamon
1/4 tsp sea salt
5 tbsp plant-based butter, chopped
* If you have Celiac disease or are highly sensitive to gluten, check to make sure the oats are certified gluten-free. Though oats do not contain gluten, they are often processed in facilities that contain wheat.
Instructions:
Preheat oven to 350 °F and lightly coat an 8x8 inch baking dish (or similar sized one) with plant-based butter or cooking spray.
Add sliced peaches to the baking dish in an even layer.
Combine dry ingredients (oats, almond flour, sugar, cinnamon and salt) in a large bowl and mix.
Add cold butter to dry ingredients and mix with hands until it’s evenly dispersed. Spread topping over peaches.
Bake for approximately 45-55 minutes until the top is golden brown and the fruit is bubbling. Serving suggestion: Top with vanilla ice cream.
