Flourless Trail Mix Cookies
Salty, sweet, chewy, hearty, toasted—these cookies turn your favorite trail mix into a crave-worthy treat.
Fiber-rich oats are combined with protein-rich almond butter to create the base of these cookies. Then nuts, seeds, and dried fruit are mixed in to provide flavor, fun texture, and a satiating combination of healthy fats, protein, and fiber. Loaded with nutrient-dense ingredients, these cookies can be enjoyed as a healthier dessert or satiating sweeter snack.
You can also utilize this recipe as a general template and change up the nut butter, nuts, seeds, and dried fruit to meet your preferences or utilize whatever you have on hand.
Flourless Trail Mix Cookies
Makes 6 large cookies
Ingredients:
1/2 cup unsalted, creamy almond butter (or other nut butter)
1/3 cup maple syrup
1 tsp vanilla extract
1/4 tsp baking soda
1/4 tsp sea salt
1 cup rolled oats
1 tbsp chia seeds
1/4 cup chopped pecans
1/4 cup chopped or sliced almonds
1/4 cup shredded coconut or coconut flakes
1/4 cup dried cherries (or another dried fruit of choice)
Instructions:
Preheat oven to 350 °F and line a baking sheet with parchment paper.
In a medium bowl, combine almond butter, maple syrup, and vanilla extract and mix until smooth and thoroughly combined. Add baking soda and salt and mix.
Next add rolled oats, chai seeds, chopped nuts, coconut and dried fruit to the bowl. Stir to combine.
Scoop out dough and form into 2 inch balls. Place on prepared baking sheet and press lightly to make a thick, flat cookie.
Bake for approximately 15 minutes until the edges begin to turn golden brown. They will continue to firm once removed from the oven.
