Peanut Butter Chocolate Protein Bars (No Bake)

Filling, satisfying, and subtly sweet — these homemade protein bars are perfect for when you need a snack that will keep you full or want a sweet treat that won’t spike your blood sugar levels.

Peanut butter, almond flour, and protein powder combine to provide about 20 grams of protein per bar, so you get all the protein of your favorited packaged protein bar but from more simple, whole food ingredients.

These are also super easy to make with no baking required. Just mix together all the bar ingredients in a bowl until a dough forms, add to a baking pan, top with the melted chocolate layer and refrigerate to let it set.

No Bake Peanut Butter Chocolate Protein Bars

Ingredients:

  • 1 cup smooth peanut butter (I recommend using Teddie’s smooth peanut butter)

  • 3 tablespoons honey

  • 1/3 cup almond flour

  • 1/2 cup plain or vanilla protein powder*

  • 3 brown rice cakes

  • 1 cup dark chocolate chips

  • 1 tablespoon coconut oil

  • Flaked sea salt, for topping

Instructions:

  1. Add peanut butter and honey to a medium mixing bowl and stir to combine.

  2. Slowly add almond flour and protein powder to the peanut butter mixture and stir. Use a spoon to mix together until you can’t anymore, then use clean hands to help work together. The batter should be similar to cookie dough.

  3. Crumble rice cakes by either using hands, placing in a zip lock bag and using back of a spoon to crush, or with 1-2 pulses in a mini food processer. Fold crumbled rice cakes into dough until they are evenly dispersed throughout the batter.

  4. Press dough into a 8 x 4 inch greased or parchment-lined baking pan.

  5. Microwave dark chocolate chips and coconut oil in 30 second increments, stirring each time, until completed melted.

  6. Pour melted chocolate over the peanut butter layer and tilt the pan so the chocolate covers the peanut butter layer completely. Top with sea salt flakes.

  7. Refrigerate bars for 30-60 minutes to allow bars to set. Remove from fridge and cut into 10 squares. If chocolate topping is too hard, let bars sit until chocolate is soft enough to cut through with ease.

  8. Store bars in an airtight container in the fridge.

*Make sure you like the flavor of the protein powder you choose to use, as the flavor will come through in the bars.
