Tomato, Corn, and Black Bean Salad

Tomato, Corn, and Black Bean Salad
Makes 4-6 servings
Ingredients:
2 cups corn kernels (frozen or from 4-5 ears corn)
1 15 oz can black beans, drained and rinsed
2 cups cherry or grape tomatoes, halved
1/2 cup chopped fresh cilantro
2 tablespoons EVOO
2 tablespoons lime juice (juice from about 1 lime)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup feta cheese, crumbled
optional: 1/2 tsp garlic powder
optional: 1/4 tsp chili powder
Instructions:
Add corn, black beans, tomatoes, cilantro, EVOO, lime juice, salt, pepper, garlic powder (if using), chili powder (if using), and 2/3 cup of feta cheese to a large mixing bowl. Toss to combine.
Taste and adjust seasoning as desired. Top with remaining 1/3 cup feta cheese. Store leftovers in an airtight container.
