Chopped watermelon and cucumber are tossed with feta cheese, lime, and mint to create a salty and sweet salad everyone will love. Leave it as is or add a little spice by adding in chili powder.

Watermelon Cucumber Salad

Serves 4

Ingredients:

  • 4 cups diced watermelon

  • 2 cups diced cucumber (about 1 large cucumber)

  • 1 tsp lime zest

  • 2 tbsp lime juice

  • 2 tbsp chopped fresh mint

  • 1/2 cup feta cheese, crumbled

  • 1 tbsp extra virgin olive oil

  • salt to taste

  • optional: 1/4 - 1/2 tsp chili powder

Instructions:

  1. Combine all ingredients in a large bowl and toss together. Serve immediately*

    *due to the high water content in the watermelon, this salad is not ideal for making ahead of time. The good news is that it doesn’t require much time to put together!
