Frozen Strawberry Yogurt Cups

The perfect frozen treat: crunchy, creamy, and full of sweet strawberry and chocolate flavor.

These Frozen Strawberry Yogurt Cups are a higher protein dessert thanks to the greek yogurt and some protein powder but still full of delicious flavor. They’re too easy not to make. Keep them in the freezer for whenever you want a single serving dessert or serve them at your next party.

Frozen Strawberry Yogurt Cups

Makes 12 cups

Ingredients:

  • 2 cups plain Greek yogurt (full-fat will be creamier, but you can do a lower fat percentage if you want to limit your saturated fat intake)

  • 1 1/2 cups fresh strawberries, diced

  • 1 scoop/serving vanilla protein powder

  • 1 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • 2 cups dark chocolate chips

  • 1 tbsp coconut oil

  • optional: freeze dried strawberries for topping (I got mine at Trader Joe’s)

Instructions:

  1. Add yogurt, strawberries, protein powder, maple syrup/honey, and vanilla to a medium-sized mixing bowl and stir until fully combined.

  2. Add chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30 second increments, stirring in between, until fully melted.

  3. Line a muffin tin with muffin liners and place just enough melted chocolate in each one to coat the bottom (less than a tbsp).

  4. Scoop the yogurt mixture and evenly distribute into the cups. You can use your spoon to smooth out the top surface.

  5. Add the remaining melted chocolate to the tops — I like to do a combination of coated and drizzled. If coating the top you can use your spoon to lightly spread the chocolate to the edge.

  6. Top with optional crumbled freeze dried strawberries.

  7. Place in freezer until hardened — at least 2 1/2 hours. If fully frozen, let thaw for about 10 minutes before serving and trying to remove the liners (once thawed enough to remove, feel free to remove all the liners at this point for any not being consumed and place cups back in the freezer without the liners).
