Creamy Pumpkin & Sage White Bean Skillet
If you're looking for a cozy, comforting dinner that's just as nourishing as it is delicious, this Creamy Pumpkin & Sage White Bean Skillet is for you. Tender white beans are simmered in a creamy pumpkin sauce with savory sage, garlic, and parmesan for the perfect combination of fall flavors. With around 20 grams of protein and 15 grams of fiber per serving, it's a satisfying, meatless meal that comes together in one pan in about 30 minutes. Simple ingredients, minimal effort, and plenty of flavor—exactly how I like my weeknight dinners.
Pumpkin & Sage White Bean Skillet
Ingredients
2 tbsp olive oil
2 medium shallots, finely diced
4 cloves garlic, minced
1 tsp ground sage
¼ tsp red pepper flakes (optional)
1 cup pumpkin purée
1 cup low-sodium vegetable broth, plus more as needed
1/2 tsp sea salt (if using low-sodium vegetable broth)
½ cup finely grated Parmesan cheese
2 (15-oz) cans cannellini beans, drained and rinsed
2 generous handfuls chopped kale (I prefer lacinato kale)
⅓ cup plain whole-milk Greek yogurt
Juice from 1/2 lemon
Sea salt and black pepper, to taste
Instructions
Heat olive oil in a large skillet over medium heat. Add shallots and cook for 5–6 minutes, until softened and lightly golden. Stir in garlic, ground sage, and red pepper flakes. Cook for another 30–60 seconds, until fragrant.
Stir in pumpkin purée and cook for 1–2 minutes, stirring frequently. Add vegetable broth and salt, stirring until smooth.
Add the beans and kale. Stir in cannellini beans and kale. Simmer gently for 5–7 minutes, until the beans are heated through and the kale is tender.
Reduce heat to low and let the sauce stop bubbling. Gradually stir in the finely grated Parmesan, a little at a time, until incorporated. Remove the skillet from heat. Mix the Greek yogurt with 1–2 tablespoons of warm sauce, then stir it into the skillet until creamy and smooth.
Finish and serve. Stir in lemon juice. Taste and adjust with additional lemon juice, salt, and black pepper as needed. Serve warm with extra Parmesan, if desired. Recommend pairing with some bread!
