1-Minute Chocolate Mug Cake

(gluten-free, dairy-free, egg-free)

Ingredients:

  • 2 tbsp cocoa powder

  • 3 tbsp oat flour (or you can sub for white or all-purpose flour)

  • 1/4 tsp baking powder

  • Pinch of sea salt

  • 2 tbsp maple syrup

  • 2 1/2 tbsp creamy peanut or almond butter

  • 3 tbsp almond or oat milk

  • 1/2 tsp pure vanilla extract

  • 1-2 tbsp chocolate chips

Instructions:

  1. Add dry ingredients (cocoa powder, oat flour, baking powder, and alt) to a small bowl (or use your mug directly but I like more room to stir) and mix well.

  2. Add liquid ingredients (maple syrup, peanut or almond butter, milk, and vanilla) to dry ingredients and stir to combine.

  3. Mix in chocolate chips (you can can save a few for topping).

  4. Transfer batter to a mug or similar sized oven-safe dish (if not eating directly from the dish, be sure to grease your baking dish).

  5. Microwave for 1 minute and enjoy!
