Strawberries & Cream Overnight Oats
Switch up your overnight oats with this Strawberries & Cream Overnight Oat recipe. Fresh strawberries are blended with almond milk, maple syrup and vanilla and poured over the oats for delicious strawberry flavor, natural sweetness, and pretty pink hue. The overnight oats are then layered with Greek yogurt, which adds additional protein and creaminess. You can opt for a plain Greek yogurt or try a vanilla variety for a true strawberries and cream flavor. I like to add protein powder and almond butter for extra filling protein.
Strawberries & Cream Overnight Oats
Makes 4 servings
Ingredients:
1.5 cups unsweetened almond milk (or milk of choice)
1.5 cups fresh strawberries, chopped (plus extra for topping)
2 tbsp maple syrup (or more if desired)
2 tsp vanilla extract
2 cups rolled oats
2 tbsp chia seeds
1 cup plain Greek yogurt (or try a zero-sugar vanilla flavored Greek yogurt)
Optional: protein powder (add to blender if using), drizzle of almond butter for topping
Instructions:
Add milk, strawberries, vanilla and maple syrup to a blender and blend until smooth.
In a medium-sized bowl add oat and chia seeds. Pour strawberry milk into oat mixture and stir to combine.
Cover the overnight oats and store in the fridge overnight or for a least 4 hours.
Assemble individual containers: Layer Greek yogurt and overnight oats in individual serving containers (about 1/2 cup Greek yogurt per container). Top with freshly sliced strawberries. Keep stored in the fridge for up to 3-4 days.
