Blueberry Overnight Oats
Overnight oats have been a longtime breakfast favorite of mine — they’re great for meal prep, easy, customizable, and nutritious.
These ones are flavored with blueberry milk — frozen blueberries, milk of choice, vanilla, and plain Greek yogurt all blended together and poured over the oat mixture.
The nutrition highlights:
oats: loaded with fiber that promotes stable blood sugar levels, reduces cholesterol, and feeds the good-for-you bacteria in your gut
chia seeds: fiber, protein, and healthy fats
greek yogurt: protein, calcium, probiotics and creamy texture
blueberries: antioxidants and fiber
The blueberries add the sweetness so there’s no additional sweetener, but you can easily blend in a little maple syrup if desired.
Blueberry Overnight Oats
Makes 4 servings
Ingredients:
2.5 cups milk of choice (I used unsweetened almond milk)
1.5 cups frozen blueberries
1 cup plain Greek yogurt
1 tsp vanilla extract
2 cups rolled oats
2 tbsp chia seeds
1 tsp ground cinnamon
optional: maple syrup as a sweetener
Instructions:
Add milk, blueberries, Greek yogurt, and vanilla to a blender and blend until smooth.
In a medium-sized bowl add oats, chia seeds, and cinnamon. Stir to mix together.
Pour blueberry milk into oat mixture and stir to combine.
Cover the overnight oats and store in the fridge overnight or for at least 4 hours.
Serve from bowl or portion into individual containers. Keep stored in the fridge for up to 4 days.
Topping suggestion: nuts or nut butter, fresh fruit
