Snickers Frozen Yogurt Bites

These Snickers Frozen Yogurt Bites are the perfect frozen treat for summer. They’re easy to make and a healthier alternative to your traditional ice cream bars. But don’t worry, they will still satisfy that sweet craving.

Greek yogurt provides protein as well as a few other key micronutrients like calcium, vitamin B12, and selenium. It is combined with peanut butter and chopped peanuts for more protein and healthy fats. This combination helps promote stable blood sugar levels and satiety, which means you’ll be less likely to overindulge. A little maple syrup and dark chocolate provide some sweetness, but contribute less sugar than your traditional ice cream choices.

Keep these stashed in your freezer to have on hand whenever you want a bite of something sweet this summer.

Snickers Frozen Yogurt Bites

Makes 10 bites

Ingredients:

  • 1 ½ cups plain greek yogurt*

  • 1/3 cup creamy peanut butter

  • ⅓ cup roasted and salted peanuts, chopped

  • 2 tbsp maple syrup 

  • 1 tsp vanilla extract

  • 1 1/2 cups dark chocolate chips

  • 1 tbsp coconut oil (to thin out the melted chocolate)**

  • Optional: 2+ scoops of protein powder

Instructions:

  1. In a medium bowl, add greek yogurt, peanut butter, maple syrup, vanilla extract and optional protein powder. Mix until thoroughly combined.

  2. Add ¼ cup chopped peanuts and combine (remaining will be used for topping)

  3. Scoop ¼ cup servings of the greek yogurt mixture and place on a parchment lined baking sheet. Use a butter knife to smooth out the bites and form round disks. 

  4. Place the greek yogurt bites in the freezer for at least 2 hours. 

  5. Add dark chocolate chips and coconut oil to a small bowl and microwave in 30 second increments (stirring in between) until chocolate is melted. 

  6. Remove the greek yogurt bites from the freezer. Using a large spoon or two smaller spoons/forks, pick up one greek yogurt bite and dip one side into the dark chocolate. Flip and dip the other side. Use a spoon to pour chocolate on any uncovered spots and spread out the chocolate as needed

  7. Before moving on to the next greek yogurt bite, sprinkle the top of the greek yogurt bite with chopped peanuts (the chocolate will start to freeze so you want to add the peanuts while the chocolate is still melted.)

  8. Place each greek yogurt bite back onto the parchment lined baking sheet. Once all bites are done, return them to the freezer and freeze for at least one hour before serving. 

You can enjoy these straight from the freezer, but for the best texture, let sit for about 5-10 minutes before serving.

*You can use whatever Greek yogurt fat content you prefer and that meets your health goals. Higher fat greek yogurts will yield a creamier yogurt bite, but will be higher in saturated fats and calories. A lower fat content is recommended if you need to watch your saturated fat intake.
