No-Bake Chocolate Peppermint Truffles
Indulge in these No-Bake Chocolate Peppermint Truffles. Each truffle is a bite of rich chocolate and a hint of cool peppermint that reminds me of my favorite thin mint cookies.
They’re a festive and healthier sweet treat that you can whip up in minutes.
They’re given a protein boost with chocolate protein powder and they’re naturally sweetened with dates, so there’s no added sugar aside from the little bit found in the chocolate. You won’t find any of the top 9 allergens in these, so everyone can enjoy them.
No-Bake Chocolate Peppermint Truffles
Makes 16-18 truffles
Ingredients:
½ cup rolled oats
⅓ cup almond butter (or sun butter if need allergen-free)
⅓ cup chocolate protein powder
¼ cup cocoa powder
1 ½ cup pitted dates, lightly packed (about 15 medjool or 25 regular dates)
½ tsp peppermint extract
¼ tsp sea salt
1 1/14 cup dark chocolate chips
1 tsp coconut oil
Optional: flaked salt for topping
Optional: crushed peppermint candy for topping (allergen-free if needed)
Instructions:
Add oats to a food processor and blend until a fine flour forms (approx. a few minutes).
Add protein powder, cocoa powder, sun butter, dates, peppermint extract and sea salt to the oats and blend until a sticky dough forms.
Add ¼ cup chocolate chips and briefly blend until mixed.
Roll dough into 1 inch balls.
Add remaining 1 cup chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30 second increments, stirring in between until completely melted.
Place each truffle in the melted chocolate and use a spoon to rotate so that the truffle is completely covered in chocolate. Place on a parchment-lined baking sheet and top with optional flaked sea salt and peppermint candy.
Place truffles in the fridge for approximately 45 minutes or until the chocolate is hardened. Store in an airtight container in the fridge.
