High Protein Strawberry Ice Cream

All you need is 4 simple ingredients: cottage cheese, strawberries, honey, and vanilla. Blend together, let sit in the freezer, and you’ve got a tasty high-protein ice cream alternative ready to be enjoyed.

High Protein Strawberry Ice Cream

Ingredients:

  • 16 oz full-fat (4%) cottage cheese (I used Good Culture)

  • 1 ½ cups fresh strawberries, sliced

  • ¼ cup honey 

  • 1 tsp vanilla extract

Instructions:

  1. Add cottage cheese, 1 cup strawberries, honey, and vanilla extract to a food processor or high speed blender. Blend until smooth. 

  2. Stir in remaining ½ cup fresh strawberries.

  3. Pour ice cream mixture into an 8 x 4 inch loaf pan (or other similar sized glass container) and place in the freezer for at least 5 hours, or until hard. 

  4. Remove from the freezer about 10 minutes before serving to allow ice cream to soften so that you can easily scoop it (the consistency is a little different from regular ice cream, so it just takes a little extra thawing time).
