Protein: Tofu and goat cheese combine to give you lots of protein without the meat. Buy pre-seasoned tofu at the grocery store so all you have to do is slice.

Ingredients:

  • 2 slices sourdough bread, toasted

  • pesto

  • 1-2 ounces goat cheese

  • 1/2 avocado, mashed

  • tomato slices

  • cucumber slices

  • 3 oz pre-seasoned and baked tofu, sliced

  • handful of arugula

Instructions:

Assemble the sandwich as follows:

  1. Spread pesto on one slice and goat cheese on the other slice.

  2. Next add the mashed avocado to one slice.

  3. Add tomato, cucumber, and tofu to either slice.

  4. Finish by adding a handful of arugula. Enjoy!
