Sweet Potato Toast - Three Ways

I’m no bread hater, but sometimes it’s nice to switch it up. Sweet potato toast is a simple way to take your toast game up a notch and boost nutrition.  

As you may have guessed from their vibrant orange color, sweet potatoes are loaded with beta carotene, the antioxidant that is converted to vitamin A in the body and is important for skin and immune health. This tasty root vegetable also contains a healthy dose of vitamin C and potassium (which is an essential mineral that may help reduce cardiovascular disease risk factors and promotes bone health). In addition to vitamins and minerals, sweet potatoes are also packed with fiber. The high fiber content is important for gut-health, balancing blood sugar levels, and keeping you full.  

Whether you’re looking to add more fiber to your diet, want a gluten-free alternative to bread, or just want to switch up your toast routine, sweet potato toast will satisfy. All you have to do is slice a sweet potato, pop it in the oven or toaster, and add your favorite toppings. Check out the recipe below for more details and three of my favorite topping combos. 

Sweet Potato Toast - Three Ways

Ingredients:

  • 1 large sweet potato (look for one that is uniform and tube-shaped, so you get even slices)

  • Toppings of choice:

    • Banana + peanut butter + cinnamon

    • Avocado + everything but the bagel seasoning (+ an egg for protein)

    • Plain Greek or plant-based yogurt + sliced strawberries

Instructions:

Note: I’ve only tried the oven method, but word on the street is that you can put the slices directly into your toaster and repeat until cooked and crispy. Toasting time will vary depending on your toaster.

  1. Preheat oven to 400° F

  2. Slice sweet potato into 1/4 inch pieces and place on parchment lined baking sheet.

  3. Bake for about 20 minutes until tender and edges are crispy.

  4. Add toppings + enjoy! Extra slices can be stored in an air-tight container in the fridge for several days. Just pop them in the toaster to reheat and toast when you’re ready to eat.
