Butternut Squash, Cauliflower, and Goat Cheese Pizza

Ingredients:

  • 1 whole wheat pizza crust

  • 1.5 cups butternut squash, diced

  • 1.5 cups cauliflower, chopped

  • 1.5 cups yellow onion, sliced

  • 1/2 cup kale, chopped

  • 3/4 cup goat cheese

  • 2 tbsp olive oil

  • 2 tsp garlic (2-4 garlic cloves), minced

  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400 °F degrees.

  2. Add butternut squash, cauliflower, and onion to a baking sheet and toss with 1 tbsp olive oil. Add salt and pepper to taste. Bake for 20 minutes or until the veggies are fork tender.

  3. Preheat oven to 450 °F degrees.

  4. Spread garlic and 1 tablespoon olive oil over the pizza crust. Add goat cheese and then the onion, cauliflower, and butternut squash. Season with salt and pepper to taste.

  5. Bake pizza per pizza crust instructions or until the crust is golden brown and cheese is melted. If using a pre-cooked whole wheat pizza crust, then total baking time should be about 8 minutes. Add kale when there is 4 minutes of cooking time remaining. Drizzle with olive oil.
